Blackened Grouper Sandwich
serves 4

 with Chipotle-Lime Slaw

Slaw Ingredients:

cup mayonnaise

cup Daisy Sour cream

2 limes juiced

1 tbsp chipotle in adobe

tsp granulated sugar

2 tbsp white vinegar

Tones Sea salt

Fresh cracked pepper

head cabbage thinly shredded

cup red onions thinly sliced

cup red bell pepper diced

3 scallions thinly sliced

cup cilantro leaves

4 white bolillios rolls sliced in half

4 tbsp soften butter


Slaw instructions:

1.      In a large bowl, whisk together the mayo, sour cream, lime juice, chipotle, sugar, vinegar and salt and pepper, to taste. Fold in the cabbage, onions, bell peppers, scallions, and cilantro. Adjust the seasonings if necessary.

2.    Spread butter on buns and toast until inside is lightly browned




2lb grouper fillets

cup unsalted butter, melted

3 tbsp Paprika

3 tbsp Chili powder

2 tsp salt

1 tsp Tone Ground Black pepper

1 tsp  dried thyme

1 tsp  Cathy's Oregano Leaf

tsp Tones Cayenne Pepper

4 leaves of green leaf lettuce

2 tomatoes thinly sliced



1.      Rinse and pat dry grouper fillets.

2.     pour melted butter into a plate pan or plate

3.    Combine all the dry spices and mix well and pour onto a flat plate or pan.

4.    dredge fillets through butter and then through seasoning

5.     Heat skillet on high heat, once skillet is extremely hot place fillets into the skillet.

6.    Cook for 2 to 3 minutes on each side.

7.     Place lettuce, tomato on bun, and top grouper with slaw.
