Spicy Shrimp Cilantro
serves 4
Shrimp Ingredients:

1/4 cup fresh lime juice

2Tbsp dry white wine

2Tbsp chipotle chilies in adobo, chopped

salt to taste

4 lime wedges

springs of fresh cilantro


Catfish Ingredients:


4 catfish fillets

1tsp salt

1/2tsp Tones Ground Black Pepper

1/2tsp Tones Garlic Powder

1 1/2 cup white cornmeal

2cups canola oil


Ingredients: Savory Sautéed Spinach


3lbs fresh baby spinach

1 small sliced onion

1Tbsp minced garlic

2Tbsp olive oil

1Tbsp butter

1/4tsp salt



Shrimp Directions:


  1. heat oil in a large sauté  pan over medium-high.
  2. add shrimp and sauté  2 min
  3. stir in garlic; cook until fragrant for about 30 seconds
  4. deglaze with wine (scrap up any bits from the bottom of the pan)
  5. simmer until reduced by  half, about 2 min
  6. stir in butter until melted
  7. combine cilantro, lime juice, and chilies in a large bowl.
  8. add shrimp to cilantro mixture and toss to coat
  9. season with salt

Catfish Directions:

  1. mix dry ingredients into bowl and mix well
  2. pour dry ingredients in shallow pan
  3. dredge catfish fillets in cornmeal mix (front and back)
  4. heat oil in large skillet
  5. when oil is hot, place catfish fillets in pan
  6. fry until golden brown on both sides
  7. remove from pan
  8. set aside
  9. when ready to serve, spoon shrimp and sauce over the catfish and spinach
  10. garnish each serving with a lime wedge and cilantro springs

Spinach Directions:

  1. melt olive oil and butter in pan
  2. add onion and sauté for 3min
  3. add garlic and sauté for 3min
  4. add spinach and sauté for 5min
  5. sprinkle with salt
  6. serve shrimp mixture over spinach
