Hot Water Cornbread
makes 4 to 6 patties
1 1/2 cup white cornmeal (DO NOT USE SELF RISE)
3 cups rapid boiling water
1tsp salt
1/3 cup canola oil
Prep Directions
  1. boil water to a rapid boil
  2. mix salt and cornmeal into bowl
  3. slowly add water to bowl and mix until well blended into a dough like texture
Cooking Directions
  1. heat skillet with 1/3 cup of canola oil
  2. roll cornmeal mixture into 3 inch balls and flatten
  3. place into hot oil
  4. fry on medium low heat or until golden brown on each side
