Mama's Hot Stuff
serves 8 to 10
3lb pig mauls
7lb pig feet
3lb pig tail
2lb pig ears
3 large chopped jalapenos peppers
32oz bottle hot sauce
2 tsp minced garlic
1 tsp sea salt (to taste)
(NOTE: use rubber gloves while handling jalapenos)


  1. place pig parts in water, bring to a boil and let boil for 20 minutes
  2. pour out water and rinse pig parts in cold water to cool meat
  3. clean pig mauls (remove access fat from pig mauls)
  4. chop all pig parts into bite size pieces
  5. place meat in clean pot and return to stove
  6. add chopped jalapeno peppers, hot sauce, garlic, Cajun seasoning, cayenne pepper, and sea salt
  7. cover meat with water
  8. cook for  minutes or until tender
